Earl Grey Spiced Almond Cake

Ingredients: Cake

  • 113 g
    icing sugar
  • 60 g
    ground almond
  • 33 g
    All purpose flour
  • 1 teabag
    Earl grey
  • 3 g
    cinnamon powder
  • 3 nos
    egg white
  • 95 g
    butter

Preparation: Cake

Cake
1 Heat the butter until golden brown colour. Strain and leave aside to cool.
2 Combine icing sugar, ground almond, flour, cinnamon and tea leaves.
3 Add egg white and brown butter. Mix well and pipe into mould.
4 Bake at 180 degrees for about 30 minutes.

Ganache

Ingredients: Ganache

  • 200 g
    Van Houten Professional Signature Milk Chocolate
  • 100 g
    Dairy Cream
  • 1 teabag
    Earl grey

Preparation: Ganache

Ganache
1 Heat cream with earl grey. Leave to infuse overnight.
2 Strain the tea mixture and re-scale mixture to 100g by adding cream.
3 Heat the tea mixture and pour into compound.
4 Mix well and leave overnight to set before piping on the cake.

Décor

Ingredients: Décor

  • 10 g
    Mona Lisa white Crispearls
  • 10 g
    Mona Lisa Meringue Drops

1 Décor with Mona Lisa Crispearls and Meringue Drops coated with gold powder.
